I don't know how, but it would be great to consider a way to integrate desktop/laptops into the plan because, of course, when the phone is down, you go to the computer (like when the whisky bottle is empty, you go to get a beer)

On Mac OS. There is a great tool called SelfControl that functionality works in a almost similar manner. Only major difference is that you have to set a timer. Works well with Pomodoro technique or you can block for a whole 8 hours or duration of a call/class.

I'd like to be able to lock myself out of websites on my desktop browser using the Brick mechanism. Maybe you could link the Brick mobile app to a browser profile, so that when I Brick my phone, my browser gets Bricked as well.

Seems unlikely to me, given how much Brick relies on IOS specific screen time features. However I get around this by using a focus app to restrict all the tempting websites to only be accessible via phone. You might try Freedom or Opal
